The tuning that matters is avoiding nuisance alerts. A walk-in door open for a delivery and a scheduled defrost both look like faults unless the thresholds include a duration, so those are set per unit during the first weeks.

The record an inspector or franchisor sees

Instead of a book of handwritten figures, you have a continuous record with every reading timestamped, including the periods when the site was closed.

It is worth being precise about what that achieves: monitoring provides evidence supporting the temperature monitoring element of your HACCP-based food safety management system. It does not replace that system, and it is not certification. What it does do is make your records credible and produceable in seconds.
